Spoon this simple sauce over crispy seared salmon nestled on a bed of layered ratatouille. (That's our favorite way!) Or, use it as a crowning finish to roasted chicken. Or, offer it up as a dipping sauce for grilled cheese sandwiches. Or, make it the creamy marinara through which you twirl your go-to cut of pasta. Or...or...or... So many options. Just do it, baby.

Use this recipe as a template and tailor it to the season, your cravings, and the protein with which you plan to pair it... Substitute shallots for the fennel, or squash and tomatoes in place of the eggplants and zucchini. Try different herbs on top too. Roast woodier herbs, like thyme and rosemary, right on top of the vegetables. Finish your ratatouille with more delicate herbs, like dill and chive, after it's been pulled from the oven.

Any stone fruit would be delicious -- and just as beautiful -- in this recipe. You can even get away with using less-than-ripe fruit because they will be softened considerably in the process of roasting and crisping. You can also use plain bacon and pepper it to your liking.
